Mediterranean Chopped Salad with Garlic Hummus Dressing

Garlic Hummus Dressing


  • 1/2 cup plain hummus
  • 3 garlic cloves
  • 1/4 cup fresh parsley
  • 1 tablespoon red wine vinegar
  • 1 tablespoons olive oil
  • 1 teaspoon freshly grated black pepper
  • 1/4 cup crumbled feta


  1. To make Garlic Hummus Dressing: Place parsley and garlic into Salad-O-Matic bowl and use salad chopping knife to finely mince garlic and parsley.  Add in hummus, red wine vinegar, olive oil, black pepper and whisk together until incorporated. Stir in feta. Taste and adjust. Transfer dressing to storage container.

  •  1-2 heads of romaine lettuce (depending on the size of the lettuce head)
  • 4-6 ounces precooked chicken breast, sliced
  • 6-8 multi colored mini sweet peppers (seeded and halved)
  • 1/2 large cucumber (sliced into 1/2 inch slices)
  • 1/4 medium red onion
  • 1/4 cup pitted kalamata olives (10-12 olives)
  • 1/4 cup peperoncino peppers, stems removed (4-6 peppers)
  • 1 tablespoon roasted pumpkin seeds
  • 1/4 cup crumbled feta
  • 1/2 cup canned garbanzo beans (drained)


  1. Add 8-12  romaine leaves to bowl, add all other vegetables and chicken to bowl. (Leave the pumpkin seeds, feta and garbanzo beans for later.)ingredients-chopped-salad
  2. Grip chopping knife in your prominent hand and hold salad bowl with other hand. Chop all vegetables and chicken to desired size with quick chopping or rocking motion.
  3. Stir in pumpkin seeds, feta and garbanzo beans and serve with dressing. med-chopped-salad-ronco
