Some days, cooking just doesn’t sound like a fun thing to do. Whenever I decide to cook a rotisserie chicken in my Showtime Rotisserie, I cook two chickens instead of just one. Insert the old saying “two chickens in hand is better than one at the store”… oh wait, maybe not. Making two chickens in your Showtime Rotisserie takes the same amount of effort as one, only you end up with a ton of leftover rotisserie chicken for all kinds of recipes. You can either store the leftover cooked chicken in the fridge for 4-5 days, or freeze it in small portions to pull out later when cooking just sounds like a drag.


No Cook Greek Rotisserie Chicken Lettuce Wraps

  • 2 cups leftover rotisserie chicken, chopped
  • 1 cup sliced mixed color cherry or grape tomatoes
  • 1/2 small cucumber, sliced into cubes
  • 1/2 cup garbanzo beans
  • 1/4 cup chopped kalamata olives
  • 1/4 purple onion sliced very thinly
  • 2 heads romaine lettuce
  • 1 teaspoon Greek seasoning
  • 2 tablespoons olive oil
  • juice of 1/2 lemon
  • store bought Tzatziki sauce
  • Feta cheese


  1. Mix rotisserie chicken with tomatoes, cucumber, garbanzo beans, olives, purple onions.
  2. Stir in Greek seasoning, olive oil and lemon juice.
  3. Add about 1/2 cup Greek chicken to romaine leaf and garnish with Tzatziki sauce and a bit of crumbled feta.
  4. Sit back and enjoy a quick and healthy lunch or dinner!
