Having a food dehydrator in your kitchen arsenal is great for making healthy snacks to create an overall sense of well-being. Whatever eating healthy means to you, it’s nice to have the kitchen tools to make food your way.
Some of the healthy snacks I like to make using my Ronco Turbo Dehydrator are; homemade beef jerky, granola, dried fruit, fruit leathers, veggie and fruit chips, gluten free crackers and pizza crusts, energy bars and even cookies!
Recently, my family has sworn off excess sugar and processed foods… so I came up with this Dehydrated Cherry Almond Cookie recipe to satisfy our family’s sweet tooth. With only 3 ingredients, these cookies are a snap to make and healthy to boot!
Dehydrated Cherry Almond Cookies
- 1 cup roasted almonds
- 1 cup pitted cherries (I used frozen as a short cut, but fresh or frozen are fine)
- 1 cup pitted dates
- Ronco Turbo Dehydrator
- Food processor or blender
- Using your food processor, grind almonds into a course, flour-like consistency.
- Add pitted cherries and dates and process until all ingredients are ground into a dough, about 30 seconds. (Do not over-process)
- Form cookie-sized disks and place onto your turbo dehydrator. (Dough will be wet, that is ok. Just handle gently.)
- Set your Turbo dehydrator to 180°F and dehydrate cookies for 9-12 hours.
- When cookies are done, they will be crisp on the outside and gooey on the inside.
Tip- Dates are nature’s sugar and are really quite sweet… but if you need that extra sweetness, add a tablespoon of good quality honey to the batter.
