Chicken Meatball Gyros with Homemade Tzatziki Sauce

Prep: 10 minutes   Cook: 16-20 minutes Serves: 4

Ingredients

Meatballs

  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • ½ Teaspoon allspice
  • ½ Teaspoon cardamom
  • ½ Teaspoon cumin
  • ¼ Teaspoon cinnamon
  • ¼ Teaspoon coriander
  • 1 Tablespoon lemon juice
  • 1/2 Teaspoon onion powder
  • 2 Tablespoons plain greek yogurt
  • ½ Teaspoon salt
  • ½ Teaspoon fresh cracked pepper
  • ½ cup panko bread crumbs

Tzatziki Sauce

  • 1 small cucumber, peeled and seeds removed
  • 2 cloves garlic
  • 1 Tablespoon lemon juice
  • 1 cup plain Greek yogurt
  • 1 Tablespoon dry dill
  • Salt and pepper to taste

To assemble

  • 4 pita breads
  • 12 slices cucumber
  • 8 slices tomatoes
  • 4 slices purple onion
  • ½ cup Feta cheese

Directions

1. In a mixing bowl, combine: 1 pound Ground Chicken, 2 minced cloves garlic, ½ Teaspoon allspice, ½ Teaspoon cardamom, ½ Teaspoon cumin , ¼ Teaspoon cinnamon, ¼ Teaspoon coriander, 1 Tablespoon lemon juice, 1/2 Teaspoon onion powder, 2 Tablespoons plain greek yogurt, ½ Teaspoon salt, ½ , Teaspoon fresh cracked pepper, 1/2 cup panko bread crumbs

2. Combine all ingredients with hands and form about 16 one ounce meatballsDSC_7835

3. Place 4 meatballs on each Ronco Kabob (as shown)and place in mesh basket. DSC_7840

4. Cook meatballs in your preheated Ready Grill for 12-16 minutes.DSC_0327-EDIT

5. Make Tzatziki Sauce: combine in Blender: 1 small cucumber, peeled and seeds removed, 2 cloves garlic, 1 tablespoon lemon juice, 1 cup Greek yogurt, 1 tablespoon dry dill, Salt and pepper to taste. Pulse until blended and cucumber is in fine chunksDSC_7861

6. To assemble, slide 1 kabob of meatballs onto each pita bread, top with 2 tablespoons of Tzatziki sauce, 3 cucumber slices, 2 tomato slices a sliver of purple onion and 1/8 cup Feta cheese.

Store extra Tzatziki sauce in the refrigerator for 2 weeks

Tip: Store-bought Tzatziki sauce is a fine substitute
