A few weeks ago my kids wanted to have some frozen pizza pockets as an after school snack. Looking at the store-bought package of unpronounceable ingredients made me weary, so instead I pulled out my Ready Grill and made them my homemade version. This way I knew exactly what I was feeding them. I even had them help prepare their own so everyone got exactly what they wanted.

Pepperoni Pizza Pockets for 4

Prep: 3 minutes   Cook: 4 minutes   Serves: 4

IngredientsPita Pizzas

• 4 pre-sliced pita pockets

• 4 tablespoons marina sauce

• 24-32 pepperoni slices

• 4 Roma tomatoes, sliced

• 12 ounces fresh mozzarella cheese

• ¼ cup purple onion, diced (optional)

Directions

  1. Fill each of the pita pockets with 1 tablespoon marinara sauce, 3 ounces of fresh mozzarella slices (if fresh is not available, substitute ½ cup shredded Mozzarella), 6-8 slices of pepperoni, 1 Roma tomato sliced, and finely purple onion if desired.
  2. Preheat your Ready Grill for a few minutes. Grill pita pockets for 4-5 minutes with the open end of the pita facing upwards.

Chicken Artichoke Pesto Pizza Pocket for 4

Prep: 3 minutes   Cook: 4 minutes   Serves: 4

IngredientsPita Pizzas

• 4 pre-sliced pita pockets

• 4 tablespoons prepared pesto sauce

• 12 ounces precooked chopped/ shredded chicken

• 1-cup fresh spinach

• 8 pieces of canned artichoke quarters, chopped

• 4 ounces fresh mozzarella cheese

• 4 ounces crumbled feta cheese

• ¼ small purple onion, sliced

Directions

  1. Fill each of the pita pockets with 1 tablespoon pesto sauce, 3 ounces of chicken, ¼ cup of spinach, 2 pieces of chopped artichoke quarters, 1 ounces fresh mozzarella cheese, 1 ounce crumbled feta cheese, and a few slices of purple onion
  2. Preheat your Ready Grill for a few minutes. Grill pita pockets for 4-5 minutes with the open end of the pita facing upwards.
