1 whole turkey (12 lbs)
2 tablespoons olive oil
4 cloves garlic minced
1 teaspoon salt
2 teaspoons minced orange zest
1/2teaspoon freshly ground pepper
1/4 teaspoon fresh rosemary
minced 6 orange slices
1 cup fresh orange juice
1. Wash and thoroughly dry the turkey, inside and out. Don’t forget to remove the giblets.
2. In the blender or food processor combine and puree the garlic, orange zest, rosemary,
orange juice, olive oil, salt and pepper.
3. Loosen the skin from the breast of the turkey. Pour some of the orange sauce under
the skin of the turkey and rub the remaining sauce over the outside. Slip the orange
slices between the skin and meat of the turkey meat.
4. Truss the turkey and rotate on the spit rods for 11-12 minutes per pound or until the
internal temperature reaches 170 degrees F (80 degrees C). Let the turkey rest for 20
minutes. Carve as usual and serve.
