Today is Family Day which is celebrated nation wide as a day to make healthy meals at home and to eat dinner with your children. We have come up with the perfect menu for you to cook for your family tonight that doesn’t take much time and you can use the leftovers to make lunch or dinner the next day!
Family Day Menu:

You can start the evening by serving your kids some dehydrated apple with white cheddar. This should keep them somewhat full until your main course.

Then season a rotisserie chicken anyway you would like. We love using lemon, sea salt, black pepper, rosemary, and thyme. Rub all of these ingredients on your chicken with some olive oil and load it into the rotisserie. Remember to cook your chicken 15 minutes per every pound.

For a side dish try this rotisserie corn on the cob recipe:

4 ears of fresh corn or 8 small frozen ears
2 tbsp. olive oil
sea salt and pepper to taste

Arrange corn in your rotisserie basket and close the lid tightly. Brush corn with olive oil and season with salt and pepper. Load basket on spit rods and roast 15-20 minutes. Remove from basket and serve with butter. If you want to get creative you can make your own flavored butter.

Then saute some green beans in a skillet. Once those are done serve with corn and chicken or you can even serve both with a side salad of your choice.

You can cut the corn from the grilled cob to use in salads, salsas, or soups the rest of the week along with the leftover rotisserie chicken.
