One green food that we can not get enough of are green beans. We love them. I think we eat them 2-3 times a week. A great benefit of green beans is that this vegetable can be frozen. They retain valuable amounts of nutrients for 3-6 months after freezing. Plus, frozen green beans are a convenient addition to many recipes.

Here is one of our favorite summer side dish recipes using green beans:
Green Beans with Garlic and Pine Nuts

1 1/2 lbs. green beans, washed and trimmed on both ends
2 tbsp. olive oil
2 cloves garlic, minced
2 ounces pine nuts (1/3 cup)
1/4 tsp. fresh black pepper

  • After green beans are washed and trimmed, coat them with olive oil and black pepper. Add them to your rotisserie basket to roast for about 10-15 minutes.
  • Heat remaining olive oil with garlic in a large skillet for 1-2 minutes and then add the pine nuts. Simmer for about 3 minutes or until lightly brown.
  • Remove green beans from basket and add to mix in the large skillet

Serves 6-8
