We love creating fresh, healthy summer side dishes to go with light meals. So, this week we have decided to do a delicious simple side dish for each day of the week!

Our “Melt in your mouth Monday” recipe is fresh, simple, and easy-to-prepare! It is a fast and healthy way to get one of our favorite seasonal veggies on your plate.
We first had this side dish at a holiday party and now we can’t stop making it. What is this famous side dish you may ask? Orange Glazed Carrots! Yes, they are just as tasty as they sound and are compatible with countless light meals at home.

Orange Glazed Carrots

1 lb. baby carrots
1/4 cup orange juic
3 tbsp. brown sugar
2 tbsp. olive oil
1 tsp. fresh ground pepper

Mix orange juice, olive oil, brown sugar, and pepper in a bowl. Toss the carrots in with it and marinate in the refrigerator for 1 hour. Toss in your rotisserie basket and roast for 15 minutes.

Serves 4.
